Demand for organic food in the U.S. is growing rapidly and projected to continue into the forseeable future. Americans have become increasingly aware of the consequences of industrialized farming, both on the land and on our bodies, and are now seeking healthy alternatives. 
Organic farmers and Organic certified processors are stepping up to answer the challenge. This means that more and more organic alternatives will be available; an important first step. As more farms convert to organic in order to satisfy the growing demand, supplies will increase with a positive effect on availability and prices.
